We've been doing this raw foods thing which, while very healthy and tasty, generally requires that meals be planned out several days ahead of time, not at 4PM the night of. Stuff has to be soaked and sprouted and dehydrated and so on. Overall, a recipe is likely to be easier than it's non-raw counterpart, but requires more organization.
I'm thinking taco salad. There's enough chips left (though they're a bit pestoesque for Mexican) that everyone can get a small serving, and I need to make more tomorrow anyways. We don't have any tomatoes, but I suppose I could request some. If I soak cashews for the "sour cream" now (will this recipe make enough, especially since the cashews won't be soaking for all that long?), I can do that and salsa (we have no tomatoes currently) after class is over, and it shouldn't take too long if I have everythign else ready to go. Except the "meat" requires the sundried tomatoes to be soaked, too. Oh well, shouldn't take too much longer to do that.
Guacamole I really can do right now, and I can cut up some peppers (though, given Mariel's love of them lately, perhaps that should wait too) and onions, and gather some lettuce.
But now Beeb is fussing, so I guess I'll take care of her first.
