Mar. 29th, 2007 05:46 amI dreamed I went to a pie shop and ordered a slice of avocado pie, despite not actually liking avocado in most settings. It was spiced similarly to pumpkin, and pretty good. Then I dreamed about trying to recreate it, including details about the stiffener (coconut oil, which, while awake, strikes me as a little too much fat). I suppose I have to try it now, though I think coconut oil will be the last resort.

* 1/2 cup lemon juice
* 1 (5 ounce) can sweetened condensed milk
DIRECTIONS
1. In a medium mixing bowl combine avocado, lemon juice, and condensed milk. Blend well and pour into graham cracker crust. Chill before serving. Garnish with whipped topping.
I'd use coconut milk and raw cane sugar stuff instead of sweetened, condensed milk. Some variants call for a bit of heavy cream, too. so a bit of coconut oil might be called for.

It does work well as a base for chocolate pudding, but that's more of a disguised thing. I'll post a recipe once I get it perfect.
